Crowned with medals, Kazegafuitara (“when the wind blows”) sake was produced using the ancestral Jusui brewing method, with the aim of producing high-quality sake, which can only be obtained with a high degree of polishing of the rice by 70%. This manufacturing process consists of using 10 to 20% less water while maintaining the same proportion of rice. The result is a full-bodied sake with a unique concentration of taste. To develop this sake, the brewery also experimented with different alcohol reductions, and retained a rate of 18%, which offers a sake with a richer taste. A delicious refreshing sake to enjoy as is or with a splash of spring water.
Tasting note: Loose and tasty style in perfect balance. Chestnut, black tea, buttermilk and orchard fruits with a strong finish.
