Muneki Matsumoto, owner of the brewery said: “I made this sake for a good friend “John”, who had always asked me to produce a dry-style sparkling sake, and I wanted to please him.” This gesture was entirely in line with the slogan of his kura: “A sake made out of friendship, for friendship”.
One of the best sparkling sakes on the market. Unlike most sparkling sakes, “John” is a brut-style junmai daiginjo, bottle-fermented, charged with 6 bars of pressure and measuring 15% alcohol. The great delicacy of its bubbles and the raw quality of this sake using very polished rice have enabled it to win several IWC trophies.
Tasting notes: This sparkling sake is made with a local “Gin no Yume” type rice, carefully brewed in the style of a junmai daiginjo, then made sparkling. With fruity notes of lime and ripe melon in the bouquet, it is a dry, clear sake with fine bubbles and refreshing notes of pink grapefruit on the palate. To finish with aromas of lemon and citrus zest on the finish with lots of body and complexity.
Pairings: As an aperitif, pastries with pastry cream.
