Este sake no está filtrado, lo que le confiere una gama de sabores más amplia que otros Juyondai. Conserva su textura sedosa y su aroma afrutado y floral. Pulido al 55%, este sake tiene mucho umami.

El arroz para sake utilizado es un cruce entre el Yamashu nº 4 "山酒4号" y el Miyamanishiki "美山錦".

Uno de los Juyondai más asequibles, es una buena entrada en el mundo del sake ultra premium.

 

Cata: Color verde lima transparente con una bonita viscosidad ligeramente chispeante. Nariz limpia con aromas de intensidad media, notas lácteas (nata, leche, yogur) y las notas florales características del sake Ginjo (manzana, plátano, piña). En boca, un sake semiseco con mucho umami y acidez, donde el alcohol es discreto; una textura sedosa, y toda la intensidad de las notas lácteas y afrutadas que persisten moderadamente hasta el final. En conclusión: un sake rico en sabores y refrescante, casi chispeante en el paladar, con un sabor muy afrutado, que contrasta con las notas amiláceas del Junmai-shu.

 

Maridaje: Pescados, mariscos, verduras y carnes a la parrilla, cocina japonesa y tailandesa.
