Juyondai Junmai Ginjo MIRAI is a sake developed by Takagi Shuzo Brewery in 1999. It took them 18 years to make a cross between Miyamanishiki and Yamadanishiki rice.This sake is extremely round, with ripe musky melon flavors.This is one of the limited-edition Juyondai signature sakes.

This sake has excellent mouthfeel and texture. With lots of umami, it goes very well with most foods. Good with raw oysters and sashimi.

 

Tasting notes: A lovely transparent color. A powerful initial nose of ripe melon, which then develops characteristic Ginjo notes (banana, apple, pear). On the palate, an initially opulent, rich sake opens up to more delicate flavors of fruit and rice, with a long, persistent finish. In conclusion: a full-bodied sake reminiscent of Muscat wine.

 

Pairings: Simmered dishes, court bouillon, seafood, grilled meats.
